Day 45 247 lbs

Yup, up 4 tenths. No worries though. I went for a good fast run last night and my hips hurt a bit today, so what’s going on is likely inflammation. I’ll give it today to calm down and tomorrow will likely be good, because I’ve been good. 🙂

Tried something very new last night, as an experiment. Bob’s test kitchen in action yet again. I made tofu tacos. Yup, you read that right. Tofu tacos. And they’re damn good! How? Start with extra firm organic tofu and press that shit until it stops bleeding water. I used my hands but there are tofu presses out there that might do a better job. Once it’s as dry as you can get it start breaking into as small a pieces as you like, into a bowl. break as much or as little as you like for the meal at hand. I used some chipotle powder, onion powder, garlic powder, ancho chili powder, cayenne powder and salt to season the tofu. Spread that on a non stick baking sheet or whatever that wont stick and bake it at 350 for about 30-40 minutes until it’s dry as crispy, stir it a couple times during the cooking. Once that’s done, use some green chilis in a can and green label El Pato sauce in a skillet over enough heat to dry out the chilis a bit and cook off some, but not all of the liquid from the El Pato, stirring constantly. DON’T LET IT BURN!!! And there’s a great taco meat, without meat! I was truly shocked at how good this was right out of the chute. Oh, and some salt to taste and if you want it, black pepper.

We made tacos with tiny corn tortillas warmed in the still hot oven on the silicone sheet to make them pliable and topped with some raw cabbage and squeezed a tiny bit of lime juice on top. If I didn’t know better, I’d think it was beef in there. It’s hot like this, spicy hot and delish! I failed to take pictures, maybe next time.
