Day 7 265.0 lbs

Yesterday, I ate an Apple, an Orange, a small handful of cashews, a few walnuts and about 4 potatoes. The result, .8 lbs! Hungry? Nope! Not really. That makes 9.1 lbs this month, in 6 days of working at this, claiming this is a potato famine all while really being Whole-Food-Plant-Based in my mind.

I know this isn’t WFPB, there’s so much more to that actual lifestyle. But this is the hard part, the part where we change our taste and grow accustomed to a more food made without Animal products, oil and excessive salt. I can’t claim to have no salt. I put some on potatoes when I can’t seem to choke another down along with hot sauce, the Taco Bell variety I’ve grown to love and black pepper. So, I agree to have been cheating. Am I? Hmmm,.. The overall goal is to be WFPB, so I’m accelerating the transition, at least in my mind I am. That said, I’m going to keep up the potatoes until the weekend at which point I can’t wait to start to think about meal prep for next week, and all the glorious food I can prep.

I’ve been watching things and learning from a Folks Over Knives magazine about the wide world of food available to me on this plan. The plan in my head is to make the weeks food and package it up for myself. I know that’s not an easy thing, but if I make that the Sunday afternoon plan, I can maintain through the week and stay on the plan.

What to make? Shit! I don’t know anything about this kind of lifestyle! Do people really prep for the week and actually eat what they made? I’ve rarely done that and actually achieved it. Terrifying! On the other hand, knowing what’s to eat each and every day can free up mental cycles for other things and time. I bought a new microwave just for this purpose. What to make? Shit! (we’ll talk about fec later, but it’s been different)

The goal is to make 5 meals, one lunch for every day, that I can take and eat as 100% of my daily lunch. Eat a simple breakfast after a walk or light run that involves some fruit or maybe a bit of oatmeal eventually. For now, I need to keep the calories low and nutrition high, so maybe something potato based will be enough starch and a huge salad topped with vinegar and maybe some seeds after a while. That sounds like a decent plan, even though I know I’ll have to make more salad on Wed evening.

I think everyone that makes this change faces the same challenge. What to eat? This isn’t easy. Having been a person that would eat almost anything that wasn’t plant based or guts, changing to eating only plants would be a huge change.
